St. Patrick’s Day is right around the corner and what better way to celebrate it, than having corned beef and cabbage! There is a ton of recipes that anyone can find, but for today, I narrowed it down to one. This recipe is very easy to follow and will actually require less effort as well as clean up!

I can remember growing up in my household and my mother making corned beef and cabbage. It was always so tender and juicy that as a child who was often very picky, I would ask for seconds! Though we are not Irish American, my mother embraced some recipes that other cultures made, by making them her own.

For today’s corned beef and cabbage recipe, it will be done in a standard slow cooker to save you the mess so that you can spend more time with your family! Less mess, less stress I always say! I without a doubt, love my slow cooker. It has saved me so many times from having to do the dishes, in addition to having some wonderful leftovers. Since there are tons of slow cookers that you can purchase, I added the one that I use frequently below. It’s inexpensive and will last you years! I’ve had my for 10 years now and still put it to use and it never complains!

Ingredients that you will need for this recipe are:

  • 1 (4lb) corned beef brisket with spice pack included
  • 1 onion cut into bite sized pieces
  • 10 baby red potatoes cut into quartered pieces (baby yellow or white are just fine as well)
  • 4 peeled carrots cut into matchstick pieces (you can also cut them into bite size pieces if you prefer)
  • 1/2 head of cabbage chopped
  • 4 cups of water
  • 6 oz of any kind of beer (this will be used a tenderizer)
