Happy Valentine’s Day Cheesecake Lovers…
Do you love cheesecake? Well if you do, this is the perfect recipe for you and it tastes phenomenal. Soft, moist, with a quick and easy crust is the perfect after dinner dessert.
Make this for someone special and enjoy it with one you love, or by yourself. There are no rules, except have fun making it and have even more fun eating it. Indulge yourself.
- 1 1/2 Cups graham cracker crumbs (if you want to add a chocolate component, scrape the filling out of Oreos and crush the cookies for your crust. You could also use vanilla wafers, which would be perfect for this dessert and have a subtler flavor than Oreos. If you would prefer a salty contrast to this sweet treat, feel free to use pretzels as your crust instead.)
- 1/4 Cup of sugar
- 8 Tablespoons butter, (1 stick) melted
- 4 (8 oz) Packages of cream cheese (let your cream cheese sit out for 20 to 30 minutes for cream cheese to soften, that will make it easier to mix)
- 1 1/4 Cup sugar
- 2 Teaspoons vanilla
- 2 Tablespoon lemon juice (substitute lemon for lime juice and add a tablespoon of grated lime zest, which would give you more of a key lime flavored cheesecake)
- 5 Eggs
- 2 Tablespoons of flour
Sour Cream Topping
- 1 Pint of sour cream
- 1/3 Cup of sugar
- 1/2 Teaspoon vanilla
- 1 Tablespoon lemon juice
Add Freshly sliced mint before adding the strawberries, this will cut through the richness of this dish and give a more complex flavor.
Also, you could add other fruits like blueberries or raspberries, and they would be equally delicious.
